Sweet Spiced Pumpkin [Vegan]
Sweet spiced pumpkin is simply autumn perfection.
1/2 tsp cumin seed
1/2 tsp ground ginger
1/2 tsp coriander seed, ground
1 tsp soft brown sugar
1 lb pumpkin, peeled and cut into thin slices
1-1/2 oz vegan margarine, melted
Preheat oven to 350°F. Place pumpkin on a greased foil-lined tray. Brush butter over pumpkin. Combine remaining ingredients. Mix well and sprinkle over pumpkin. Bake 35 minutes, or until cooked through. Serve hot.
